Why Butter Mochi Is Gluten Free
Butter mochi is made with mochiko, which is glutinous rice flour — sweet rice that’s been milled into a fine powder. The name trips people up: “glutinous” sounds like it should contain gluten, but it doesn’t. The word refers to the sticky, glue-like texture of the rice when it’s cooked, not to the protein gluten found in wheat, barley, and rye.
Mochiko contains zero gluten. It’s pure rice flour. The other core ingredients in traditional butter mochi — butter, coconut milk, sugar, and eggs — are also naturally gluten-free. The entire recipe, from the original Hawaiian potluck version to the seven flavors we bake at Pixlcat, has always been gluten-free without anyone needing to make it that way.
This is what makes butter mochi different from most gluten-free baked goods. There’s no almond flour standing in for all-purpose flour. No xanthan gum trying to replicate the structure that gluten provides. No rice flour blend attempting to mimic what wheat does naturally. Butter mochi was built on rice flour from the beginning — the chew, the density, the texture are all features of the recipe, not compromises made to avoid gluten.
What About the Word “Glutinous”?
This is the most common question we get, and it’s a fair one. “Glutinous rice flour” genuinely sounds like it should contain gluten. But the terminology predates modern understanding of gluten as a protein.
“Glutinous” in this context means “sticky” or “glue-like.” When glutinous rice is cooked, it becomes exceptionally sticky compared to regular rice — that’s the quality the name describes. The protein gluten, which is found in wheat, barley, rye, and their derivatives, is a completely different substance. Glutinous rice contains none of it.
